Corn casserole is a rich creamy savory dish (also known as cornbread casserole.) Add this to compliment your main course meal for the holidays or anytime.This easy recipe is much like a pudding filled with corn, sour cream, eggs, butter, cheddar cheese and the cornbread muffin mix. I like to spice it up with onions and green chilies.My family lives too far away, but my husband comes from a large family. Our holiday gatherings house over twenty some people. Now with an additional member to the family, a baby boy, born on Oct. 14, 2009 to our niece. This family is really growing. Our niece is mentioned in my prenancy lens.When it is my turn to have the family over for one of the holidays, Thanksgiving, Christmas, New Years Day or Easter, I like to add a more creative casserole dish than passing a bowl of corn around the table.
